Hot Buffalo Wings

I picked this up on my very first travels to the USA in 1987 and have been hooked ever since.
Make sure you make your own Blue Cheese Dip which is a winner everytime!
Ingredients
- 12 Chicken Wings
- Salt & Ground Black Pepper
- Celery Sticks cut in to 3" / 75mm batons
- "Franks" Buffalo Wing Sauce
- Blue Cheese Dip - See Dips Recipe
Method
Step 1
Cut the pointy tip of the wing off and discard or save them for making a stock. Next cut the wing in half by running your knife through the joint. (See images above)
Step 2
Season the wings well with the salt & pepper
Step 3
Traditionally the wings are deep fried until golden and crispy for around 5-7 minutes - But you can roast then in the oven, turning them once for about 15 minutes per side. I usually have the oven quite high on 200° - 220° / 425°F or Gas Mark 7
Step 4
Once the wings are cooked through and golden - toss them in the Buffalo sauce and serve immediately with the blue cheese & celery. I like so serve with a little pot of the Buffalo sauce for extra dipping!
