Bangin Blueberry Pancakes

These are real easy to knock up and taste amazing and perfect for a lazy Sunday morning! You can obviously omit the blueberries if you prefer or add strawberries. Or how about mixed berries or melted “Terry’s” chocolate orange…
Ingredients
- 125g Self-Raising Flour
- 1 x tsp Baking Powder
- 2 x tbsp Caster Sugar
- 1 x Large Free Range Egg
- 50g Butter - Melted
- ¼ x tsp Salt
- 150g Fresh Blueberries
- 130ml Semi-Skimmed Milk
- Maple Syrup to serve
Method
Step 1
Preheat the oven to 110º C (Just to keep the pancakes warm)
Step 2
Put the egg, milk, ⅓ cup of water into a bowl or food processor and whisk/blitz to combine. Then add 40g of the melted butter and give another quick mix.
Step 3
Sift the flour and baking powder into the bowl or processor and add the sugar and a pinch of salt and whisk/blitz until no lumps of flour remain.
Step 4
Wipe a heavy based frying pan with a kitchen towel scrunched up dipped in the remaining melted butter. Heat the pan up to a moderate temp, then add 2 tablespoons of your mixture per pancake.
Step 5
Cook for about 1-2 minutes and then place a few blueberries (see pictures) TIP: Push the berries down into the mixture.
Step 6
Flip and cook for another minute or so and then remove from pan keeping warm in the oven and repeat until all the mixture is used.
Step 7
Serve with a good drizzle of maple syrup a few extra loose berries and a sprinkle of icing sugar.
