Absolutely love this recipe. Obviously you can buy the paste from any supermarket and some of them are really good too) but why not try my green curry paste here


  • 500g Chicken Breast - Cubed
  • 4tsp Thai Green Curry Paste
  • 1 x Clove Garlic - Finely Chopped
  • Tin of Coconut Milk
  • 6 x Kaffir Lime Leaves
  • 2 x tsp Fish Sauce
  • 1 x tsp Caster Sugar
  • 1 x Red Chilli - Deseeded & Sliced in to Rings
  • Bunch of Fresh Coriander


Step 1

Gently fry the curry paste paste and garlic in a wok or large pan to release the flavours. Be careful not to burn at this stage!

Step 2

Now add the chicken and fry off for about 2-3 minutes - keep things moving. Then add the tin of coconut milk, kaffir leaves, fish sauce, sugar and mix together. Cover and simmer for 5-8 minutes until the chicken is cooked.

Step 3

Chop the coriander leaves and some of the stalks (separately). Throw the stalks in to the curry and garnish each serving with the leaves and red chilli.
