Thai Green Chicken Curry ?

Absolutely love this recipe. Obviously you can buy the paste from any supermarket and some of them are really good too) but why not try my green curry paste here
Ingredients
- 500g Chicken Breast - Cubed
- 4tsp Thai Green Curry Paste
- 1 x Clove Garlic - Finely Chopped
- Tin of Coconut Milk
- 6 x Kaffir Lime Leaves
- 2 x tsp Fish Sauce
- 1 x tsp Caster Sugar
- 1 x Red Chilli - Deseeded & Sliced in to Rings
- Bunch of Fresh Coriander
Method
Step 1
Gently fry the curry paste paste and garlic in a wok or large pan to release the flavours. Be careful not to burn at this stage!
Step 2
Now add the chicken and fry off for about 2-3 minutes - keep things moving. Then add the tin of coconut milk, kaffir leaves, fish sauce, sugar and mix together. Cover and simmer for 5-8 minutes until the chicken is cooked.
Step 3
Chop the coriander leaves and some of the stalks (separately). Throw the stalks in to the curry and garnish each serving with the leaves and red chilli.
