Homemade Roasted Red Pepper Hummus

This is a variation of the Classic Hummus

Ingredients

  • 2 x Red Bell Peppers - Roasted
  • 1 x Tin Chickpeas 400g - Washed
  • 1 x Clove Fresh Garlic - Crushed
  • 2 x tbsp Tahini
  • 2 x tbsp Lemon Juice
  • ½ tsp Smoked Paprika - Plus some for garnish
  • Salt & Pepper
  • 3 x tbsp Extra Virgin Olive Oil

Method

Step 1

Slice the peppers in half and roast in the over for 20-25 minutes at 200

Step 2

Peel the skin from the peppers and discard. The put the peeled peppers, chickpeas, garlic, tahini, lemon juice and smoked paprika to a blender and blitz - Slowly adding the olive oil while blitzing.

Step 3

Check for taste and texture. Add salt & pepper if required and possibly a little drop of water if the dip is too thick.

Step 4

Serve in a bowl drizzled the more olive oil and sprinkled with paprika & some wholemeal toasted pitta - Hummus will keep in a fridge up to 5 days
