Mint Raita

Thought it was about time I put this on here – another one thats too easy not to be given some airtime. Very similar to the Greek dish Tzatziki which you can get here.

Ingredients

  • 250ml Natural Yogurt
  • ½ Cucumber - Peeled, De-seeded & Grated
  • 4 tbsp Fresh Chopped Mint
  • ¼ tsp Coriander Powder
  • ¼ tsp Ground Cumin
  • 2 tsp Green Onion - Finely Chopped
  • Pinch Salt

Method

Step 1

First prep your cucumber by peeling and de-seeding, then grate in to a sieve. Now sprinkle a pinch of salt and leave to drain over a bowl (same as when you make Tzatziki)

Step 2

Whisk the yogurt lightly to loosen it up and then add the rest of the ingredients and mix together.

Step 3

Cover with cling and chill in the fridge until ready to serve.

Step 4

TIP: Try whizzing it up in a blender to get a smoother sauce...(My preferred option) ????

I just like cooking great food..
