This is a healthy alternative to the deep fried battered stuff…which I love by the way, so I’m NOT suggesting this recipe is to replace them, merely offered as a healthyish change…

Ingredients

  • A Fillet of Haddock, Cod or Salmon per person
  • 2 x Large Sweet Potatoes
  • A Handful of Raw Peeled King Prawns (optional)
  • 1 x Chopped Shallot
  • About 5 Baby Plum Tomatoes per person
  • A Bunch of Fresh Torn Basil
  • 1 x Fresh Lemon
  • Grated Fresh Parmesan
  • Good Quality Buffalo Mozzarella thinly sliced

Method

Step 1

First peel your sweet potatoes and cut in to chips, then bring to the boil in a pan. Once boiling remove from heat. (You don't want over cook them)

Step 2

Preheat the oven to 220°. Drizzle a little olive oil and season a roasting tin, then lay your fish in. Now drizzle the fish in olive oil and season also.

Step 3

Next lay the prawns, halved tomatoes, basil, mozzarella & shallots over the fish and finish with a squeeze of half a lemon and the sprinkle with the parmesan.

Step 4

Finally place the sweet potato chips around the sides and end in necessary, season and bake the whole dish in the preheated oven for about 15-20 minutes until nice and golden.

Step 5

Serve on a warmed plate, squeeze the remaining lemon and spoon over a little of the juices from the roasting tin
