These are one I found on Facebook and they are too simple not to be on here – Literally ANYONE can make these. You can vary the fillings to suit your own taste.
TIP: Try par boiling some sweet potato and adding that to your filling…and or my old fav Chorizo
Ingredients
- 4 Large Free Range Eggs
- Filling of your choice...I Used: ½ Red Pepper, ½ Medium Onion, 3 Rashers Smokey Bacon - All finely chopped
- ½ tsp Baking Powder
- ½ tsp Vegetable Oil
- 60ml Milk
- Pinch of Salt & Pepper
- Small knob of butter
Method
Step 1
Spray a 6 tin muffin tray with vegetable oil
Step 2
Sauté your fillings in a little butter in a frying pan and then fill your muffin tray. Leave about a centimetre from the top, then sprinkle the cheese on top of your filling.
Step 3
Whisk your eggs, oil, milk, baking powder salt & pepper in a pouring jug. (TIP: The jug makes it easier to pour)
Step 4
Next pour the eggs into the muffin tray on top of your filling and then bake in a pre-heated oven for about 20-25 minutes at 190° C / 375° F
