This can be done in 10 minutes and will transform any side salad, steak sandwich, BBQ. The key is to use the best quality mixture of tomatoes & season well (to your taste). Don’t be afraid to experiment with different dressings – forget measurements and use your instincts
Ingredients
- A mixture any good quality: Ripe on Vine Tomatoes, Roma, Cherry, Baby Plum, Santorini
- Red Onion Finely Chopped
- A Bunch of Fresh Coriander & Flat Leaf Parsley Chopped
- Dressing: Salt, Black Pepper, Olive Oil Extra Virgin
- A Squeeze of either: Fresh Lime or Lemon or a Wine Vinegar of your choice
Method
Step 1
Coarsely chop your preferred tomatoes in to chunks and place into a mixing bowl
Step 2
Add the finely chopped red onion, coriander and flat leaf parsley
Step 3
Season with salt & black pepper and the olive oil - Then dress with the squeeze of your choice
