Za’atar can be bought in some specialist supermarkets but is easier to make yourself. Za’atar is a crucial spice blend used in eastern Mediterranean cooking and once you use it you’ll never not use it again!


  • 1 x tbsp Sumac
  • 2 x tbsp Dried Thyme
  • 1 x tbsp Roasted Sesame Seeds
  • 2 x tbsp Dried Marjoram
  • 2 x tbsp Dried Oregano
  • 2 x tbsp Ground Cumin
  • 1 x tsp Sea Salt


Step 1

Toast your sesame seeds in a dry pan for a couple off minutes.

Step 2

Add all ingredients to a spice grinder or pestle & mortar - grind up but not too much, you want the sesame seeds to be recognisable.

Step 3

Store in a sealed jar in the dark and it should last a couple of months
