This is one of the easiest, quickest ands tastiest soups I’ve ever made
- 2 x Leeks Trimmed & Chopped
- 225g / 8oz Potatoes - Peeled & Diced
- 1 x Onion - Diced
- 1.2 Litre Stock - Veg or Chicken...
- 150ml Double Cream - (Optional)
Gently sauté the onions & leeks together in a little butter until softened for 2-3 minutes then add the potato and continue to sauté for another minute or so.
Now add the stock and bring to the boil over a medium heat the turn down, cover and simmer for around 30 minutes, or until the vegetables are soft- stirring occasionally.
Place all of your soup into a blender and process until completely "Steve Silk Hurley" ???? smooth and free from any lumps.
Return to your (clean) saucepan and bring back up to heat. Add the cream if using, season to taste, serve immediately. Done.
