Beautiful Tomato Salsa

Fresh Tomato Salsa

This can be done in 10 minutes and will transform any side salad, steak sandwich, BBQ. The key is to use the best quality mixture of tomatoes & season well (to your taste). Don’t be afraid to experiment with different dressings – forget measurements and use your instincts

Ingredients

  • A mixture any good quality: Ripe on Vine Tomatoes, Roma, Cherry, Baby Plum, Santorini
  • Red Onion Finely Chopped
  • A Bunch of Fresh Coriander & Flat Leaf Parsley Chopped
  • Dressing: Salt, Black Pepper, Olive Oil Extra Virgin
  • A Squeeze of either: Fresh Lime or Lemon or a Wine Vinegar of your choice

Method

Step 1

Coarsely chop your preferred tomatoes in to chunks and place into a mixing bowl

Step 2

Add the finely chopped red onion, coriander and flat leaf parsley

Step 3

Season with salt & black pepper and the olive oil - Then dress with the squeeze of your choice
